Time to Celebrate!
I was reading a magazine the other day, and one of the blurbs said “Don’t reward yourself with food, you are not a dog!” And while no, eating your feelings is generally not a good idea, sometimes you deserve a little indulgence. And this is one of those times for me, because I have some exciting news to share!
One:I got a job!! I’m going to be instructional manager at my University’s gym (where I teach yoga) next year!! I’ll be in charge of overseeing all the yoga, pilates, dance, and martial arts classes. And while I was warned that most of the job will involve a lot of unexciting things like keeping track of our budget, still, I’ll be a manager, and that sounds exciting to me!! Plus, one of my good friends who teaches at the gym is going to be working with me! Sounds like it’s going to be a pretty great job to me!
Aaaand two: that same friend who will be working as a student manager with me will also be spending 6 weeks with me interning in SPAIN!!!! In exactly one month, we’re hopping on a plane to spend the summer abroad!! We’re living in an apartment in Seville and interning in a hospital part- time! I’m going to be working with an endocrinologist, and also helping out in a natural pharmacy. The internship sounds like it will be an incredible experience, and although I’m a little nervous about having to speak in Spanish, I cannot WAIT to go! Since the job is only part time, I plan to spend the other part of my time there exploring, traveling, eating, and enjoying everything Spain has to offer. Ahh I feel so lucky!
I’m still going to try to blog when I’m over there, but it might be a little more about Spain life than about recipes. If any of you have been to Spain (or Portugal, Italy, or Morocco, which I also plan to visit!) please leave me any tips or travel suggestions you can think of!
Okay. So, back to indulging.
Chocolate Peanut Butter Mousse. You won’t believe how sinfully delicious this tastes. It’s thick and rich and (shhh don’t tell) it’s healthy!!
Rich Chocolate Peanut Butter Mousse
Vegan, gluten free, high protein
- ~8 oz tofu (I used half of a container of TJ’s sprouted tofu)
- ¼ c natural creamy peanut butter
- ¼ c chocolate chips
- ~2 T nondairy milk
- Additional sweetener/cocoa powder, if needed
Directions: Add your milk and tofu to a blender or food processor and blend until smooth (you may need to stop and stir it a couple times). Blend in the peanut butter. Melt the chocolate chips in a double broiler on the stove or in the microwave, and add the melted chocolate to the mixture. I added another ½ tablespoon of unsweetened cocoa and a ½ T of agave, but after I let the mousse sit in the fridge for about an hour, the richness and flavors really came out—so if you taste it right away, make sure you don’t add too much additional sweetener!
You could also double the recipe and pour (scoop?) it into a pie crust to make chocolate peanut butter mousse pie!!
Each serving has ~230 calories, 14 g carbs, 15 g fat, 11 g protein, 3 g fiber, and 9 g sugar. You can’t find a richer indulgence with those nutrition stats!
Eat slowly and savor every amazing bite. Ahhhh, life’s good.
